So, now I have this hunk of wonderful meat that I could almost eat on its own. Its around 1/5 of a pound!

You can weight everything you eat in an obsessive fashion like I do. This brand of bacon usually has less fat than other brands, so at least it’s not going to turn my pan into a swimming pool of deliciousness.

Oscar Meyer center cut (thick) has been the most consistent, IMO. All the others are like “slab, slab, tracing paper, spider web, slab”

Mmm oven baking a nice tray of bacon slabs like that at around 250 degrees for a few hours is sooooo good. If I am lazy/immediately need bacon , around an hour at 325 comes out almost as good though. Blows pan fried out of the water by such a ridiculous margin.

Hmm, I have a very shitty electric oven, so it’s not gonna happen shamefully. I could trap some heat in the pan with a cover but that’s about it.

I think that those are the result of the pork belly running out in the cutting machine, and just placing another slab of belly atop it. I saw one of the apprentice butchers do that incorrectly.

On the other side of the market, in the fish section, when they have a very small cut of salmon that no one would possibly buy, they cut the skin off and make salmon patties. So I guess they could do that with bacon, bacon infused patty.

I would cube that up and cook with it. Baked beans in my boston baked bean pot would be my first thought. That usually calls for salt pork but some smokey bacon would do just fine.

I made Bak Kwa yesterday. I had it in Singapore a while back and had a craving yesterday. It’s basically Singaporean pork jerky. You take ground pork, add a bunch of seasoning and honey, mix it, refrigerate overnight, then roll out into thin sheets. You bake it twice (once at 275, then again at 475 while basting it with honey/flipping it over). Actually, there’s about 10 ways to make it but it’s amazing.

Nah, I prefer my eggs cooked in butter always. With some peppers, onions, and garlic sauteed in it first.

Electric ovens are generally more consistent than gas from what I understand. I wonder if grilling bacon would come out decently ?

And trying to get packs with a decent meat to fat ratio, worst task ever, bacon packs should, by law, be clear on the back.

We go through 3lbs a week on keto, and have been buying Hormel Black L abel it has been fairly consistent, but you still get the random strips that are 1/2 wide but somehow 3 s lices thick, the meat to fat ratio is decent.

I’ve tried Members M ark, Wright and Cloverdale were all awful.

The last time I cooked bacon on any sort of open fire, it created a 30 foot fireball lol. But I imagine a grill might be slightly more manageable than that. That time was a cookie sheet with an entire costco tray of bacon on an outrageous camp fire. Thankfully I didnt burn the damn forest down...
